Monday- Tortellini Alfredo (my oldest's favorite)

MEXICAN DORITO CASSEROLE
1 pkg. Doritos
1 onion
2 lb. hamburger
2 cans cream of chicken soup
1 can Rotel tomatoes
1 can whole kernel corn or Mexi corn
Grated cheese
Layer Doritos in bottom of 9 x 11 inch dish. Brown together chopped onion and hamburger. Drain. Mix soups, tomatoes and corn together. Heat on top of stove to speed up preparation time. Place meat on top of Doritos layer. Pour soup mixture on top of meat. Bake until casserole bubbles through. Top with grated cheese. Melt cheese. Serve with salad.
Martin Luther King day has thrown my week off...still feels like Sunday.

After I was in the hospital for 10 terrifying days, people from my husband's work were gracious and kind enough to provide us with dinners for 2 weeks. They will never know how grateful I still am for that kindness.
Out of it, we have a new family favorite recipe from our friend Shelby :) She created this recipe on her own. I'm going completely on memory since I cannot locate the printed "recipe". Hope to find it, considering we are having this tonight!
Fajita Chicken Rotini- preheat to 400 F
(1) box/bag Rotini noodles (could use penne or rigatoni, anything tubular)
1-2 jars of white pasta sauce- we use Ragu parmesan & cheese
1 cup parmesan/reggiano cheese (comes in a little tub)
1-2 cups mozzerella cheese
1-2 cups pre-cooked fajita chicken, amount based on preference
mozz cheese to sprinkle on top
cook pasta about 1/2 way. you don't want it to be too mushy as it will cook more in the oven
drain pasta
mixed pre-cooked chicken, pasta, sauce, mozz cheese and parmesan/reggiano cheese together
place in medium casserole dish
bake for 15 minutes
sprinkle remaining mozz cheese on top
bake for another 5-10 minutes or until cheese on top is bubbly
serve hot with garlic bread

I started teaching a class not long ago on how to get the best deals on groceries, clothing, gifts, etc. I told the classes, if you want to cut costs but don't want to cut coupons, STOP eating out... plan your weekly/monthly menus. You will save immediately by doing this... shop for your weekly or bi-weekly menu.

Another week is already here... sheesh. Where does the time go?
As it is Easter week, we will have a light menu. Here is goes:
Monday- oldest DS has basketball pizza night to wrap up his team's season

Here is the recipe for Chicken & Sausage Gumbo (made a double batch)
Chicken Sausage Gumbo Recipe
1/4 cup vegetable oil
1/2 cup flour
1 Tbsp vegetable oil
4 lbs chicken parts, skinned
3/4 tsp black pepper
1/4 tsp salt
2 cups chopped onions
1 cup each chopped celery and sweet green pepper
3 garlic cloves, minced
8 cups cold water
1 lb andouille or other smoked sausage, cut diagonally into 1/2" slices
1/2 tp cayenne pepper
1/2 tsp dried thyme leaves
2 cups okra, cut into 1" pieces, or a 10 oz package sliced frozen okra
2 Tbsp sliced green onions
1/4 cup minced fresh parsley
hot red pepper sauce to taste
4 cups cooked long grain rice
In a heavy 6" skillet, heat the oil over moderately high heat. Add the flour and cook, stirring constantly, for 10 min or until it is deep brown. Remove from heat. In a 6 quart Dutch oven or stockpot, heat the oil over moderately high heat. Season the chicken with 1/4 each of the black pepper and the salt. Brown the chicken for 4 minutes on each side or until golden, then transfer to a platter. In the dutch oven, add the onions, celery, green pepper, and garlic. cook, stirring occasionally, for 5 minutes, or tender. Stir in the roux and heat until bubbly. Gradually whisk in the water, mixing until smooth. Add the chicken and the sausage, the remaining 1/2 tsp of black pepper, the cayenne pepper, and the thyme. Bring to a boil, then lower the heat and simmer, uncovered, for 1 1/2 hours, skimming the surface occasionally. Stir in the okra and green onions; cook for 10 min longer. Stir in the parsley and season to taste with the red pepper sauce. Ladle the gumbo over the rice. Should make about 8 1 1/2 cup servings.
I had a gut feeling something was wrong... way wrong. I decided to take him to the doctor. Appt was at 3:15p, but due to the enormous amount of people in the lobby, I knew it would be at LEAST an hour wait... I was wrong... 1 1/2 hours.
They took J back, weighed him, etc. Took his temp... I about fell on the floor. 104 F temp
Oxygen levels were dangerously low... nasal swabs... and the diagnosis... Influenza B... the nasty, dangerous flu that is making it's way around the country. Poor kiddo... he is just miserable. He is laying on the floor in front of me as I type this with a big comforter and giant body pillow. His fever finally broke about 8:15p. AND he can't go back to school until Thursday, minimum. Plus, it's State Assessments this week. UGH!
So, tonight J had soup. Little brother R had to have what big brother had instead of what was on our plan... so R had soup. But daddy and I had the Pork Laredo... pretty good! Thank goodness for stockpiling. I had tons of soup, gatorade and Aleve/Tylenol. I did have to pick up Sprite and popsicles for him though. Say a prayer for J to get better soon.
