Starting today, Christmas Clearance should be 75% off [minimum of 50%]. Since I am on vacation this week, I'm going today to see if I can do any coupon matchups for extrodinary savings!

If so, I will certainly post pics later.

Also, Targets semi-annual toy clearance has started at 30%. I, of course, will wait until it's at 75% [my rule] to stock up for gifts for the year of 2010 [gulp] and Christmas next year.

TIP: make a list of EVERYONE you will need to buy gifts for in the next year. Include a few extra birthday party gifts that your child[ren] will tell you last minute they have been invited to a friend's party.

CHALLENGE: only buy the items at 75% off or more and track your savings. I will be!

A Camping We Will Go... A Camping We Will Go

We are going MIA for a few days over the 4th of July with family who we consider friends (and the other way around) to Lake Perry. We get the best spot for our large group (thanks Justin) and hang out with the best people.

We are not taking a vacation as we have in years past so this fun 4-5 days at the lake will substitute.

I'm looking for great campfire menus. We have all sorts of cooking equipment amongst us all, so tools for cooking- not a problem.

Here is the menu I have so far:

Breakfast
Breakfast Burritos (egg, bacon or sausage, cheese wrapped in tortillas)
Pancakes/Sausage (using the bisquick shake n pour- it works fabulous!)
Cereal/milk
Muffins (pre-making these to take with us!)
Yogurt, granola, peaches (for mom!)

Lunch
Sandwiches- (lunchmeat/cheese or PBJ)
Pizza Mountain Pies (instead of the cherry pies- using pizza sauce-homemade- pepperonis, mozzeralla cheese)
--need a couple of other ideas here!--

Supper
Brats
Hot Dogs
Hamburgers (premade patties)
Chicken packets (in tinfoil)
Chips
Corn on the Cob
Hobo stew
--open to other suggestions here--

Fresh Fruit (canteloupe, watermelon, strawberries)

trail mix (making myself with ingredients from the 'organic' shop at HyVee)
rice krispie treats (making before we go- better make a double batch)

now, my smores are NOT the typical graham cracker, chocolate, marshmallows...

here's my 'recipe'

fudge striped cookies (package at Walmart is $1.15 right now)
peanut butter
marshmallows

we get the marshmallows roasting
then spread peanut butter one of the chocolate sides of one cookie
place the gooey toasted marshmallow between 2 cookies and enjoy.

Ummm, not sure why I have been so laxed in updating this blog (1 of 5 - yikes). Perhaps my 'side job' has taken too much time (photography biz) or the kiddos in soccer, baseball, track, youth group, guitar lessons or hubby's much needed desire to go camping.

Valentine's @ Home

I am amazed at-- how when I put a lot of thought into something with the frugal kicker attached-- what I can come up with for a holiday at home.

Granted, Valentine's Day is not a major holiday, but when I was young, we did not celebrate anything really. Even my birthday. No... we were not jehovah witnesses.. just broke. I still felt like a homemade card would have been better than ignoring the day all together.

So, these days, I live vicaroiusly through my children and really make a big deal out of holidays, mostly by traditions we start, food I prepare and spending TIME together.

For Valentine's, here is what we did:

Breakfast- heart shaped choco-chip pancakes with sliced strawberries, syrup and orange juice
Lunch- Sandwiches and a trip to the library for some kiddo dvds
Dinner- (my fave of the day)
Marinated Bruschetta
Grilled Shrimp on avacado balsamic bed
Garlic butter asparagus
Chicken piare with herbed cream cheese wrapped in prosciutto ham (OMG, this was so good)
Rolls

and for dessert...............

Chocolate Fondue!!
the boys loved this! Although, the little man only dipped one thing and then just ate strawberries naked.

After the kiddos went to bed, the hubs and I by the fireplace, cheese platter, strawberries and a nice tingly Reisling wine. Yes, we drank the whole bottle.

Total cost for our Valentine's day dinner and festivities $37.22

Plan Valentine's Day On A Budget Rate:

So your pocketbook is lean but your love isn't. How do you shower your beloved with adoration without breaking the bank? Here are a few ideas to help keep her heart happy.

Things You’ll Need:
A little creativity
Paper (construction or otherwise)
Picnic Basket (optional)
Bubble bath
Candles

Step1
While Hallmark is great for many occasions, store bought cards can be expensive and generic. Why not make your own Valentine's Day card? It can be as simple as using some construction paper and writing something personalized from the heart. Or, if you're computer savvy, hop on the computer and create a card there. Better yet, upload a photo of the two of you and presto -- instant card with an abundance of heartfelt sentiments!

Step2
Flower shops make a killing this time of year. Why not avoid the hassle? And who says you need to give red roses on Valentine's Day, anyway? If you're lucky enough to live in a warm climate, why not pick your own bouquet of flowers? Better yet, it's free! If you can't, then I suggest going to the grocery store and creating your own arrangement. Face it, every gift that you put a little of "yourself" into is going to be much more appreciated than any easily store-bought item.

Step3
Send your Valentine romantic text messages or emails throughout the day, leading up to the promise of a romantic evening once home. It also shows that you're thinking about her all day long.

Step4
Chill a bottle of champagne. Wait, did I say champagne? Who says champagne needs to be expensive? Buy the less expensive brand and then make a mimosa, Bellini, or Kir Royale. (These are drinks that you mix champagne with orange juice or raspberries, thus the quality of the champagne isn't necessarily as important.)

Step5
Don't have money for a gift? Make your own coupon book! Cut some paper in strips and list all the things you'd like to do to make Valentine's Day last more than just one day a year. Let your imagination soar. Simple coupon examples include "Redeemable for one back rub anytime" or "Redeemable for one home-cooked romantic dinner" or "Redeemable for one night of passion."

Step6
When your beloved arrives home, lead her with flowers to an awaiting bubble-bath.

Step7
For dinner, dim the lights, light some candles (or better yet, the fireplace!), throw a blanket on the floor and have a candle-light picnic at home. Your picnic basket can include the champagne, or maybe some strawberries and dipping chocolate you picked up from the grocery store. Allow your senses to open and enjoy feeding each other!

Enjoy the company of the one you love!

For an extra bonus, in the morning serve him/her breakfast in bed!

Any way you slice or dice it, there are lots of ways to turn your leftovers into culinary delights. You’ll save you money in the long run by finding creative ways to cut the waste in your kitchen! Take a look at these five items:

Bread: In my mind, bread is anything made out of flour. The heels of loaf bread can be easily used to make croutons, be toasted for French onion soup, or in our house, we simply spread the peanut butter on the heel side and flip the softer bread side out so the sandwich looks like a sandwich. There are five of us and hamburger and hotdog buns come eight to a package. Use the leftover buns for garlic bread to serve with another night’s meal. One package then covers two nights worth of meals and the buns don’t go moldy in the breadbox.

Meat: You’ve got a half a steak left over from dinner; by itself, it won’t make a meal. If you’re like my family, half a steak is tossed in a ziplock bag and gets lost in the back of the fridge. Instead, chop it up and use it in a steak and egg omelet for breakfast or as a soup/stew starter for another night’s dinner. Or put it in a plastic container, top it with frozen mixed veggies and freeze for a lunch you can reheat at work.

Vegetables: You cooked a pot of green beans that didn’t get finished at dinner. Don’t toss them. Either put freeze in a Ziploc, or keep a big Rubbermaid container in the freezer for veggie orphans. When the container has enough assorted vegetables, make a veggie and rice soup, or use the vegetables for stir-fry.

Milk: Not enough left for a glass in the bottom of the jug? Don’t pour it down the sink. Put it in a zip-seal bag and freeze it for sauces and cream soups. When you’re ready to use it, melt it right in your pan from a frozen state—no need to thaw.

Eggs: Even if you don’t use all your eggs before the expiration date, they stay fresh for quite a while. Crack them in groups of three, scramble and freeze in a plastic bag to use later. Most cake and brownie recipes require three eggs so you can thaw the eggs in the plastic bag under cold running water in a matter of minutes. Or, thaw and scramble for breakfast.

At Thanksgiving, we had A LOT of yummy mashed potatoes leftover. I made 3 Shepards Pies with the leftover taters and put them in the freezer for meals down the road.

Sometimes the loaves of the ends of bread won’t get used for toast and sandwiches. But don’t toss them instead here are a few frugal tips to get them used up.

* Bread crumbs - Toss them in a freezer bag and store in the freezer. Once you have a bag full of ends saved up. Spread the slices of bread in a single layer on a baking sheet and dry in a low temperature oven (250 degrees) for an hour or so until the bread is dry and crisp yet not toasted. Whirl the dried bread in a food processor or blender and store bread crumbs in a air tight container. Use in recipes that call for bread crumbs such as meatloaf.
* Feed the birds - Again save your bread loaf ends in a freezer bag in the freezer. Once you have a bag full find a local park or pond and feed the ducks, pigeons, or other local birds. This is a fun frugal activity to do with your children.
* Bread pudding - Bread pudding originated as a frugal recipe to use leftover stale bread. With a few basic ingredients like stale bread, eggs, milk, and spices like cinnamon and nutmeg you can make a simply hearty dessert.
* Croutons - Save bread ends in a bag in the freezer till you have a bagful. Then thaw bread, cut into cubes, toss in olive oil or melted butter. Season with your favorite seasonings such as garlic salt, oregano, thyme, or whatever peaks your fancy. Spread cubes of seasoned bread onto a baking sheet and toast in an 350 degree oven for 30-40 minutes stirring occasionally to prevent burning and even toasting. Store cooled croutons in a air tight container or bag.

MEXICAN DORITO CASSEROLE

1 pkg. Doritos
1 onion
2 lb. hamburger
2 cans cream of chicken soup
1 can Rotel tomatoes
1 can whole kernel corn or Mexi corn
Grated cheese

Layer Doritos in bottom of 9 x 11 inch dish. Brown together chopped onion and hamburger. Drain. Mix soups, tomatoes and corn together. Heat on top of stove to speed up preparation time. Place meat on top of Doritos layer. Pour soup mixture on top of meat. Bake until casserole bubbles through. Top with grated cheese. Melt cheese. Serve with salad.

Martin Luther King day has thrown my week off...still feels like Sunday.

Here is our menu for the week of 1/19/09. I will be making some weekly additions/changes.
The first will be to include at least one recipe of a menu item each week.

Enjoy!

Monday- Fajita Chicken Rotini Bake (recipe below) + Cheesy Garlic Bread

Tuesday- Chicken Tortilla Soup - Family Favorite!

Wednesday- Taco Loaf - Family Favorite

Saturday- Chili (with enough for next week menu items)

Sunday- Beef Tips over Rice with Rolls

After I was in the hospital for 10 terrifying days, people from my husband's work were gracious and kind enough to provide us with dinners for 2 weeks. They will never know how grateful I still am for that kindness.

Out of it, we have a new family favorite recipe from our friend Shelby :) She created this recipe on her own. I'm going completely on memory since I cannot locate the printed "recipe". Hope to find it, considering we are having this tonight!

Fajita Chicken Rotini- preheat to 400 F

(1) box/bag Rotini noodles (could use penne or rigatoni, anything tubular)
1-2 jars of white pasta sauce- we use Ragu parmesan & cheese
1 cup parmesan/reggiano cheese (comes in a little tub)
1-2 cups mozzerella cheese
1-2 cups pre-cooked fajita chicken, amount based on preference
mozz cheese to sprinkle on top

cook pasta about 1/2 way. you don't want it to be too mushy as it will cook more in the oven
drain pasta
mixed pre-cooked chicken, pasta, sauce, mozz cheese and parmesan/reggiano cheese together
place in medium casserole dish
bake for 15 minutes
sprinkle remaining mozz cheese on top
bake for another 5-10 minutes or until cheese on top is bubbly

serve hot with garlic bread

January menu is done! I have planned the whole month. I get made fun of a lot for this, but I DO NOT care.

Why the WHOLE month? Well, for a few reasons.

1. If there is a rockin' sale with coupons in a week that does not have certain need, I know I can buy and freeze for later.
2. Saves money.
3. Saves time.
4. Makes family excited to see what is coming up on the menu.
5. To keep from everyone asking "What's for supper tonight"?

Did you know your kids grow out of their clothes?

Ha ha ha... yes, I, too, know that. But WOW! sometimes it sneaks up on you! My 3 year old has only ONE pair of jeans/pants with no holes in them. So, I begrudingly decided I was going to have to suck it up and buy him some NEW jeans.

I went to Target over my lunch break * read- did not eat* and one pair of jeans (on sale) were $12. I prayed about it and decided to go to Salvation Army. I haven't had a lot of luck finding things in his size lately. So, I thought I would be SOL.

Glad I went.

I ended up with the following:

4 pair of jeans
1 pair of camo pants (we're a camo family :) )
2 pair of sporty pants
2 long sleeve shirts
2 short sleeve tshirts
1 sleeveless shirt
2 jackets/pullovers

Name brands- levis, ralph lauren, tommy hilfiger, Gap etc.

How much????

13 pieces

$10.19 total
LESS than the price of ONE pair of jeans from Target. Thoughts are things. Prayer is bountiful.

People that know me well know that I make no apologies for where I do most of my family's clothing shopping... Salvation Army.

Why? Well, my mantra is "NEVER, never ever pay retail again!". And I don't. I have a 13 yr old boy that has grown 4 inches in 6 months. As you can imagine, this causes complications for pants specifically.

I often find jeans for him at Goodwill on Santa Fe for $4.99 each. Name brands- Levis, Tommy Hilfiger, FUBU and others. So, for the price of ONE pair of brand new jeans, I can get 8 pair!

Salvation Army has better price points, however. Here is a run down on their special deals (Kansas City region):

M-T-W 50% off all clothing
Fri 50% off children's clothing
3rd Monday of every month, 75% off all clothing- next one is 12/15/08- next Monday
1st Monday of every month 75% off ANYTHING in the store (age 62 or over)

The clothing items I pick up for myself are name brand, often with tags still on them. AND they are the clothing items people make comments on. I found a great vintage zebra trench that gets raves... price paid? $2.75!!
